There seem to be two extremes when it comes to wine. On one side, there are the snobs who look down their noses at your choices (when they deign to offer you wine at all) and then proceed to lecture you on what “real” wine tastes like. And then some people just want a drink and don’t care that choosing the wrong wine can result in any number of social faux pas. Nobody likes these extremes, least of all me. So instead I’m going to break it down into simple, easy steps. If you follow these guidelines no one will think less of you for ordering the second cheapest bottle on the list or calling yourself an expert after your third tasting.

Step 1 – Figure Out If The Place Serves Good Wine – Do Your Research!

If you are going to a restaurant or wine shop it is always good policy to do some research ahead of time. Use the internet, check out Yelp reviews, call around and just figure out what types of wines they have available. Then when you show up at said establishment during business hours you can ask about which specific bottles are available for tasting. This way no one thinks that their wine steward is hiding anything unpleasant from them because if there was something unpleasant on the menu everyone would know about it by now. Just remember not all places have an extensive list so don’t get too discouraged if there aren’t a lot of options.

I’m going to assume anyone reading this is aware that buying the second cheapest bottle on the list isn’t going to go over well in most cases. You should also know enough about wine to be able to order something that can be reasonably expected not to taste like vinegar or nail polish remover even if it’s just “red” and/or “white.”

Step 2 – Know What You’re Drinking

Don’t get me wrong, sounding cultured when you drink wine has its place but no one should have to learn how to do so at a dinner party or while out enjoying a nice meal with friends and family. If you want to impress your fellow winos, order something familiar, and don’t bother asking what flavors it’s supposed to have. Just pretend you know what you’re drinking but don’t be surprised when your “rare” grape tastes like the ones on store shelves everywhere or that your “exclusive” winery bottled something that tastes like every other bottle on the shelf.

Step 3 – Ordering Wine And Food

If you’re lucky enough to be eating at a restaurant with knowledgeable wait staff they’ll probably make suggestions as to how certain items will go with others. If you stick with those recommendations everything should turn out pretty well as long as the kitchen isn’t closed and/or out of whatever food-wine combo is listed on the menu. If unsure, I’d recommend avoiding any dish that lists a specific wine as an ingredient or sauce inspiration. If it says “Pinot Noir Reduction” on the menu that means it probably isn’t going to go well with Cabernet Sauvignon unless they’re willing to bring out a different bottle just for you.

These pairings can be described in many different ways: the standard description is that the wines’ flavors will be brought out and complemented by the foods, but if the pairing is done incorrectly one might say that the wine’s flavors were masked by or overpowered by the food.

This being said, there are a few basic rules to keep in mind when pairing food and wine together:

– Pairing by taste 

Pairing by taste is generally more successful than by color. Even though red wines may be considered to go better with meat, that doesn’t mean that all reds will produce a delicious flavor if combined with that type of dish. Even white wines can easily overwhelm a delicate fish or pate if it has been aged in oak barrels which give off intensely strong flavors. The best way to know what will work is to try different types of wine and different types of dishes together until you find something that tastes good together.

– Sweet things 

You should always take into consideration the weight of the wine in a dish. Lighter wines tend to go better with lighter dishes while heavier wines should be paired with heavier foods.

For some reason, sweet things do not always make a good pair for a wine. Many people who are trying to learn about food and wine pairing also believe that you should never combine these two because it can lead to an overwhelming or underwhelming combination of flavors that cancel each other out instead of complementing each other.

As with most things in life, there are often exceptions to the rules or guidelines that exist. There is no scientific backing for which wines pair best with what food tastes, but try to follow these guidelines when planning your next wine dinner party.

Rules of thumb:

Reds, whites, and bubbles tend to go well with food because they contain acidity. Acidic wines cut through the fat in foods like buttery sauces or oily rich meats which can make you feel bloated after eating them. Also, it is known that many reds have tannins in them which act as palate cleansers.
